Sweet Baby Beets & Pesto Sandwiches

Serves 6

Sweet Baby Beets & Pesto Sandwiches

Pesto Ingredients:
1 cup chopped fresh basil
1/4 cup pinenuts, toasted 
1/4 cup Parmesan cheese 
Pinch of salt 
3-4 tablespoons olive oil 

Sandwich Ingredients:
4 ciabatta rolls, toasted 
pesto (see above)
Bald Eagle Foods Sweet Baby Beets
feta cheese

Directions:
1. Pulse all of the pesto ingredients together in a small food processor, blend until smooth.

2. Toast the buns, and then assemble the sandwiches. Spread the pesto on the toasted rolls, and then top with Bald Eagle Foods Sweet Baby Beets and feta cheese.
